COARSE SALT AND FLEUR DE SEL FROM AVEIRO Coarse salt and fleur de sel from Aveiro are sea salts produced in the salt pans of the Ria de Aveiro. Salt is harvested from the salt pans, where salt water, sun and wind naturally contribute to the crystallisation process. Coarse salt is characterised by its larger, irregular crystals. It can be used both during cooking and for seasoning a wide variety of dishes. Fleur de sel is finer and more delicate. It forms on the surface of the salt ponds and is carefully harvested to preserve the structure of its crystals.
